Let the baking begin! It's January!

After sitting in my chair playing phone games, watching movies, and sleeping in during the Christmas vacation, my brain was not ready to come up with new bakes for the month.  So yeah, I used AI prompts to come up with some ideas for baking this year. I know some of you may be annoyed or incredulous by this, but I took half a dozen classes on using AI to my advantage and why not have fun with it?  Some of the ideas were laughable like dulce de leche fortune cookies, and some of them actually seemed like a cool idea. For this week I took all the suggestions and added the shortbread cookie with orange, which in China is good luck for their new year.  More on that later...  I can only write about the experiences that I have. But I believe that there is as least a thread of commonality that you could pick up on in my stories. Otherwise, I fear, you are currently reading this blog because you have no idea where I'm coming from, which as you can imagine is concerning.  The decision did not come lightly, which cookies to make for the Christmas party. It can look easy on the outside looking in, when you  look at what someone brings to a potluck. You think, "Oh that's Patty and her famous sausage rolls" or "Oh here comes Jerry and his butter tarts". It implies ownership. Something that identifies that person and what they are not only good at making but that defines what they deem good enough to make and share with the ones they love. It says something about them.  I sit down, every Day after Thanksgiving and contemplate what baking says about me. Honestly I enjoyed making that last blog so much that I want to keep going!  So here is what happened since the last blog: I did NOT use that bread. Only because it was hard like a brick, only itty bitty holes. I think I must have not let it rise long enough? I dunno, it wasn't good, so I pitched it and bought some sandwich rolls from Kroger. I will try again but not just now.   Because of the bread, I didn't use the garlic aoli yet. The plan is to just use regular bread today and make the sandwich. More on that later. Tomato soup and chili - so I am going to have to put them in smaller containers and freeze some because apparently, I don't tend to eat the same things often. And then there is leftovers from really good meals like Thanksgiving turkey dinner and such. Eating what you want

 If we haven't met before, I'm Vicky and I am a wife, mother, martial artist (Tai Chi and Iaido), and project specialist in battery recycling. My true passion though is cooking and baking. This week I only had to work 3 days with 2 martial arts classes so I have more time to cook and bake. Yay! I dont like sitting around much, so I planned to make some things from scratch that I have not done in a while, or even, ever in some cases.  I started off with planning the meals I wanted to make instead of what I think I need to eat for my constant state of dieting. In this week's planning I included Mom's Thanksgiving (I am making  the deviled eggs and the green bean casserole) as well as using up leftovers from the Vicky's Thanksgiving meal we had on Wednesday. My kids work schedules are crazy so we do it when we can.   Once the plan was done I looked at what I could do to use up leftovers like cranberry sauce and make it into something new.
